This morning I did one of the hardest body weight workouts of my life.

I stumbled upon Bodyrock last night and after reading some reviews decided to incorporate it into this morning’s workout.  Well it became this morning’s workout.  I never thought 4 sets of 7 exercises could be so strenuous.  Boy was I wrong, but I feel great.  I highly recommend you give it a shot if you’re looking for an at-home exercise routine.

If that workout wasn’t enough to wake you up, my newest recipe certainly will.  I combined my three favorite things: coffee, coconut, and chocolate.   I’ve never been a fan of the way Starbucks does iced coffee.  I’m not sure if it’s their coffee, the milk they use, or their syrups, but they never leave me satisfied.  I finally decided it was time to make my own.

Homemade Coconut Milk Iced Mocha
yields 20 ounces

  • 1 tablespoon homemade chocolate syrup (recipe follows)
  • 1 1/2 cups ice cubes
  • 1 cup iced coffee (recipe follows)
  • 1 cup coconut milk (I use vanilla flavored)

Add chocolate syrup to the bottom of your glass, top with ice cubes.  Pour in coffee first, then add coconut milk.  Stir until combined.  Enjoy!

Homemade Chocolate Syrup (adapted from This Homemade LIfe)
yields 1 cup

  • 1/2 cup sugar
  • 1 tablespoon cocoa powder (cacao powder will work nicely also)
  • 2 1/2 teaspoons cornstarch
  • 1/2 cup water
  • 2 tablespoonsbutter
  • 1/2 teaspoon vanilla

Combine sugar, cocoa powder, cornstarch and water in a small saucepan.  Bring to a bowl over medium-high heat.  Once boiling, stir in butter and vanilla.  Lower heat to medium and stir constantly until butter is dissolved.  Remove from heat.  Store refrigerated in an airtight container.  Enjoy!

Iced Coffee
yields 8 cups

  • 8 ounces dark roast coffee grinds
  • 8 cups of water

Combine coffee grinds and water in a large air-tight pitcher.  Allow to sit at room temperature for at least 8 hours, overnight if possible.  Strain your mixture through cheese cloth, or an air press. Store in refrigerator until ready to use.  Enjoy!
