After some time, okay okay a long time, I have decided to return to the world of blogging. I guess you could say food blogging intimidated me. I see all of these beautiful food blogs with amazing photography, and unique recipes. I thought I could never be that good. But I have turned over a new cookie, I mean leaf. I blog for me. So I can cook delicious meals, bake scrumptious desserts, and write witty stories. Speaking of me, I did some soul(food) searching.
Over my months of blogging silence I did less cooking, less eating, and more reading. I originally started doing Weight Watchers but was quickly put off at the restrictions on daily points. I felt so limited on how much I could eat. Although it did help me eat a lot less every day, I felt too restricted. It wasn’t helping me eat healthier. Choosing not to eat lunch so you can have wine — bad idea. While I loved clean eating, I felt like it was too calorie heavy and the emphasis on eating so many times during the day was causing me to gain weight. The real food wake-up call came from an amazing book by Kimberly Snyder, The Beauty Detox Solution. While at first her book seems kind of crazy, it really works for me. I won’t divulge the entire eating plan to you now, but it focuses mainly on a plant-based diet with proper food pairings. I plan to incorporate her lifestyle into many of my recipes.
The changes to my posts will be small, and mostly found in the ingredients used in my recipes. I do not mix carbohydrates/starches and protein. I have cut out gluten. I start every morning with a delicious fruit/vegetable smoothie called the Glowing Green Smoothie. I still “cheat” and make cookies/cupcakes/cake. When I indulge I go all the way (without gluten of course). I don’t feel pressured to exercise and love doing my nightly yoga poses. While I eat a lot less animal protein I still eat it a few times a week, but never paired with starches. I have given up cow’s milk dairy and my allergies have never been this under control. Okay I could go on and on. But the best part: I lost 25 pounds in 6 weeks. It’s amazing!
I hope you will stick around to see what new and exciting things we have in store for 2012, it’s always a wild (but tasty) ride with Goofy! And for those of you wondering, that delicious cupcake from the Main Street Bakery in Walt Disney World was not gluten free. But Disney is amazing at working with dietary needs!

Hello! My name is Karen, I’m 26 and currently live in Austin, Texas with my husband. When I’m not working as a nanny, you can usually find me in the kitchen. This blog is where I share my love of cooking, nutrition, and domestication. I'll share my favorite recipes, how-to-photos, and any tips and tricks I pick-up along the way. I hope this blog inspires others to spend more time in the kitchen cooking delicious food. While I strive for optimal nutrition, I also love to bake. I've recently got gluten free and dairy free, as well as refocused my diet on mostly plant based nutrients with high-quality meats for protein. I hope this blog inspires others to get back into the kitchen.
