…and she’s back!  Sorry everyone.  I’ve been off cooking again.  Making homemade pumpkin yeast bread, homemade lasagna, a Lego cake, roasted chicken, pumpkin french toast, and a few other delicious dishes.  But you know I don’t think I photographed a single one!  Oh well, guess I will have to make them all over again.  Except for this, this was probably a once a year kind of cake.

Sorry the pictures are blurry and over saturated.  The lighting in my parent’s kitchen is not ideal for picture taking and it was too heavy to move just for the sake of a photo.  It was for my brother’s birthday (yeah he’s somewhere between 30 and 40) but I think my nephew liked it better.  Apparently he still asks for “Macko Cake-o” every now and again.  The Lego was easier than that.  Used the same loaf pan and a mini muffin pan.  Then frosted with blue frosting and wrote Lego on the nobs.  Done.  Fondant looks prettier, but it’s such a pain to deal with.

Pumpkin Yeast Bread (Soak 3-4 pieces in a mixture of 2 eggs, 1/4 cup sugar, sprinkle of cinnamon, and 2-3 tbsp of milk for 30-60 min. Pan fry 5 min a side for delicious french toast)

Perfect Roasted Chicken (Save bones and put in slow cooker with two chopped carrots, half of celery stalk chopped, half onion chopped, and 4 cups of water.  Cook on high for 4 hours.  Freeze broth in individual servings.)

Creamy Jalapeno Salsa (Serve with chips, or make chicken nachos with the above mentioned chicken)
