I had mentioned last week I prepared a clean chocolate coconut pie.  I believe I described it as awkward.  The taste was fine, but the texture was rather grainy and not creamy.  Well I can say with confidence this pie aged well.  I let it sit in the fridge for two nights and it was much creamier than the first time.  Obviously if the pie had been made with whipping cream, melted chocolate, and butter it would be deliciously rich and decadent.  But that isn’t the point of clean eating.  So I leave you with a clean gluten-free chocolate coconut pie that ages well.  Oh and if you want to top it with whipped cream (not clean, I know), make sure you add a little coconut extract.  It really adds to the pie.

 

Clean Chocolate Coconut Cream Pie

  • 3/4 cup oat flour
  • 1/4 cup coconut flour
  • 1/4 cup almonds
  • 2 tbsp honey
  • 3 tbsp coconut oil, melted
  • 1 1/3 cup coconut milk
  • 1/2 cup coconut water
  • 1/3 cup sugar (I used coconut)
  • 1/4 cup coconut flour
  • 1/4 cup cacao powder
  • 1/2 tsp vanilla
  • 4 tbsp toasted unsweeted coconut flakes
Cooking Directions

Preheat your oven to 375 degrees. Meanwhile using a food processor pulse the almonds until they form a flour-like consistency with small almond chunks. Add oat flour and whole wheat pastry flour. Pulse once to combine. Pour in honey and coconut oil. Pulse 3-5 times until combined. Press into the bottom of your pie plate. Bake for 10 minutes, or until edges begin to brown. Remove from oven and set aside to cool.

While crust is cooling combined coconut water, coconut milk, sugar, coconut flour,cacao powder, and vanilla in a small saucepan. Heat the mixture over medium heat until it starts to boil, stirring frequently. Allow mixture to boil for one minute and then remove from heat. Set aside to cool for 5-10 minutes. Pour over crust and refrigerate overnight. The longer you can let it refrigerate the creamier your filling is. Sprinkle toasted coconut on top of pie as desired. Top with whipped cream (spiced up with a tsp of coconut extract). Enjoy!
