A few weeks ago I had a bit of a disaster attempting to make hummus.  I ended up with tasty tahini, but no hummus.  Today I have remedied that.  Inspired by this recipe from Daily Garnish I picked up lots of fresh basil at the grocery store today.  I turned up the recipe a notch by adding spicy red pepper flakes.  I love me some spicy hummus.  Paired with diced tomatoes and pita chips it was the perfect lunch.

Spicy Basil Hummus (adapted from Daily Garnish)
yields about 2 cups

  • 1 can garbanzo beans (15 oz), rinsed and drained
  • 1 cup basil leaves
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 2 tbsp tahini
  • 1-2 tbsp red papper flakes (depending on desired level of spice, can also omit if desired)
  • pinch of salt, to taste

In a food processor, add garbanzo beans and pulse once or twice until they start to break up.  Add tahini and basil and blend until it starts to form hummus.  Add remaining ingredients, tasting as you go.  Serve with veggies and/or pita chips. Enjoy!
